For slightly larger buns, shape the dough into fewer portions. We used two ovens, but if you have an upper baking rack, you can cook everything at the same time in a single oven. Tools used: Regular Size Omni Pan Omnia oven baking grid or perforated baking tray Silicone mold Large pot Thermometer Ingredients: ¾ cups (180ml) warm water (approximately 110°F, 43C) 1 and ⅛ teaspoons (3.5g) instant or active dry yeast 2 Tablespoons (28g) unsalted butter, divided 1/2 teaspoon (3g) salt 1/2 tablespoon (6g) brown sugar 2 cups (250g) all-purpose flour, plus more for work surface coarse sea salt for sprinkling Baking Soda Bath: 1/2 cup (120g) baking soda 9 cups (2.1 L) water Instructions: In a large bowl, whisk together the warm water and yeast. Let stand for 1 minute. Melt 1 tbsp of butter, reserving the other half for later. Whisk the melted butter into the yeast mixture along with the salt and brown sugar. Add the flour gradually, mixing with a wooden spoon or dough hook until a thick dough forms. If sticky, add a little more flour, a little at a time, until the dough is soft and slightly tacky but not wet. Test by poking with your finger—the dough should bounce back. Knead the dough for 5 minutes, either by hand on a lightly floured surface or in the stand mixer. Place the dough in a lightly greased bowl, cover with plastic wrap, and let rise in a warm spot until nearly doubled in size, about 1 hour. Punch down the risen dough, then turn out onto a lightly floured surface. Divide into 6 pieces and shape into balls. In a large pot, bring water and the baking soda to a boil. Gently drop the buns in the boiling water for 20–30 seconds. Avoid boiling longer, as this can give the rolls a metallic flavor. Remove with a slotted spatula, letting excess water drip off, and place on the prepared baking sheet or pan. Score the tops of the rolls with a sharp knife. Melt the remaining butter and brush over each roll. Sprinkle the buns with coarse sea salt. Bake at 225F for approximately 40 minutes, until deep golden brown. Serve warm.
