Get Edye's Cookbook on Amazon here - https://amzn.to/3H7Fton E-book Version - https://littlehouseofbeans.com/e-book/ols/products/outdoor-cooking-with-edye-featuring-the-omnia-oven-e-book-version Tools used: Omnia Oven 2L Silicone liner Ingredients: 1 package Bob Evans Mashed Potatoes, (32oz or 907g), *homemade mashed potatoes may be used of course!* Pillsbury Phyllo pastry dough sheets (2 rolls 9x14 inch) 16 oz 454g large yellow onion, finely chopped 1 cup (120g) shredded cheddar, or cheese of choice 1 egg, beaten Salt & Pepper to taste 2 teaspoon (4g) of turmeric 3-4 cloves of garlic, minced 1/4 cup (60ml) of vegetable or olive oil Sprinkle of Sesame seeds Instructions: Heat a skillet over medium heat and pour in the vegetable oil. Add the chopped onion, salt, pepper, and turmeric. Sauté for about 2 minutes, stirring occasionally, until fragrant. Remove from heat and let the onions cool. In a large bowl, combine the mashed potatoes, salt, pepper, cheese, garlic, and the cooled onions. Mix everything together until smooth and well incorporated. Prepare an oven-safe pan by lightly spraying the bottom with olive oil. Using one roll of phyllo dough, take one sheet at a time and crinkle-fold them to cover the bottom of the pan completely. Spread the potato mixture evenly over the phyllo base, ensuring it’s fully covered. Take the second roll of phyllo dough and crinkle-fold the sheets roughly over the potato layer, creating a textured top. Brush the top layer of phyllo generously with egg wash and sprinkle with sesame seeds. Bake at 200°C (390°F) for approximately 45 minutes, or until the top is golden and crispy. Let cool slightly before serving. Enjoy!
