I like to freeze extras to keep on hand for a quick snack or to serve when unexpected company arrives. Tools used: Omnia Regular Size Pan Perforated Baking Grate Ingredients: 16-18 egg roll wrappers 1.5lb (24oz, 680g) pound ground pork 2 cups (200g) tri-color cole slaw mix ½ cup (80g) onion minced 2 cloves (6-8g) garlic minced 2 teaspoons (10g) chili paste 2 tablespoons (20g) ginger, minced 1 tablespoon (15ml) soy sauce 2 tbsp (30ml) oyster sauce 1 tablespoon (15ml) natural Rice Vinegar 2 tablespoons (30ml) butter melted 2 tbsp (30ml) Sesame oil Salt & Pepper to taste ¼ water (60ml), to seal the egg rolls Instructions: Heat a large skillet over medium–high heat and add the sesame oil. Cook the ground pork until browned, about 10 minutes. Stir in the salt, pepper, onion, garlic, chili paste, and ginger. Mix well. Add the coleslaw mix, soy sauce, oyster sauce, and rice vinegar. Cook for an additional 5 minutes. Remove from the heat and let the filling cool slightly, about 10 minutes. To assemble, place an egg roll wrapper on a clean surface in a diamond shape. Spoon about 60 ml (¼ cup) of filling into the center. Fold the bottom corner over the filling, then fold in the sides. Roll tightly toward the top corner, brushing the edge with water to seal. Arrange the egg rolls seam-side down on the prepared baking sheet. Brush the tops with melted butter. Bake at 225F-250F or until golden brown and crisp, 45–50 minutes, rotating the pan halfway through. Serve warm with your favorite dipping sauce.
