Get Edye's Cookbook on Amazon here - https://amzn.to/3H7Fton E-book Version - https://littlehouseofbeans.com/e-book/ols/products/outdoor-cooking-with-edye-featuring-the-omnia-oven-e-book-version USB KITCHEN AID MIXER - https://amzn.to/44gnyWB Tools Used: Omnia maxi pan (non stick ceramic or with silicone mold) Hand Mixer Zester/Grater Sifter Ingredients: 8 oz (225 g) cream cheese (1 package), softened 15 oz (425 g) can sliced peaches, drained and diced – keep the juice and set aside ½ cup (113 g) butter (1 stick) 1 ½ cups (300 g) sugar 2 large eggs 2 ¼ cups (280 g) all-purpose flour 1 tablespoon (12 g) baking powder 1 ½ teaspoons (7.5 g) salt 1 cup (240 ml) milk ½ tablespoon (about 5–6 g) lemon zest 1 teaspoon (2.5 g) cinnamon Glaze Cake Soak: (Optional) Juice of half a lemon (about 1 tablespoon / 15 ml) ½ cup (120 ml) peach juice (from the canned peaches) 1 1/2 tablespoons (22 ml) Bourbon (your choice) Instructions: In a large mixing bowl, beat the cream cheese and butter together until smooth. Add the sugar, eggs, and lemon zest, and continue beating until the mixture is light and fluffy. In a separate bowl, whisk together the flour, baking powder, salt, and cinnamon. Gradually add the dry ingredients to the wet mixture, add the milk, and mix until just combined. Gently fold in the diced peaches. Pour the batter into the prepared greased omnia maxi pan and smooth the top. Bake at 225F / 107C for approximately 60 minutes, or until a toothpick inserted into the center comes out clean. While the loaf is baking, stir together the reserved peach juice, bourbon, and lemon juice in a small bowl. Once the loaf is out of the oven and still warm, use a skewer or toothpick to poke small holes across the top. Slowly pour the mixture over the loaf, allowing it to soak in. Allow the loaf to cool completely in the pan before slicing and serving.
