Get Edye's Cookbook on Amazon here - https://amzn.to/3H7Fton E-book Version - https://littlehouseofbeans.com/e-book/ols/products/outdoor-cooking-with-edye-featuring-the-omnia-oven-e-book-version Tools used: Omnia oven 2L Silicone liner Food processor Ingredients: 2 ½ cups (235 g) gluten free oat flour, (same as 2 ½ cups quick oats blended into flour, I used Bob’s Red Mill brand) 1 tablespoon Chia seeds, soaked for 5 mins in 2 tbsp water to form a gel like substance 2 teaspoons (8g) baking powder ½ teaspoon (2g) baking soda ½ teaspoon (2g) salt 1 tsp (2.5g) cinnamon ¾ cup (184 g) applesauce (or plain dairy free yogurt) ¾ cup (184 g) almond or cashew (or any non-dairy milk) 2 large eggs ¼ cup (55 g) avocado oil, or any preferred oil ¼ cup (85 g) honey 1 cup (104 g) old fashioned rolled oats, (use certified gluten free oats) 2 tablespoons water (30 ml) Instructions: Pour the rolled oats in a high-powered blender or food processor. Blend until the oats turn into a fine, powdery flour, about 1-2 minutes. Add the chia seeds, baking powder, baking soda, salt, applesauce, milk, eggs, oil and honey to the oat flour. Blend until smooth, stopping to scrape down the sides halfway through. The batter will be thin. Add 1 cup of the old-fashioned rolled oats to the blender. Pulse 2-3 times to incorporate, leaving the oats slightly textured. Pour the batter into a greased omnia oven (or greased silicone liner) Sprinkle additional oats on top for decoration. Bake at 200F / 93C for 30-40 minutes or insert a skewer into the center, and it should come out clean with no wet batter. Cool the bread in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
