Get Edye's Cookbook on Amazon here - https://amzn.to/3H7Fton E-book Version - https://littlehouseofbeans.com/e-book/ols/products/outdoor-cooking-with-edye-featuring-the-omnia-oven-e-book-version Tools used: Blender/food processor Omnia oven 2L Silicone liner Ingredients: 2 cups (400g) red lentils, soaked overnight (minimum of 4 hours, ideally about 8 hours) 1/2 cup (125g) Greek plain yogurt 3 eggs ½ cup (120ml) olive oil 1/3 cup (50g) crumbled feta cheese 1/4 cup (35g) chopped Kalamata olives ⅓ cup (50g) sun dried tomatoes, chopped 2 tbsp (6g) chopped fresh dill 2 tsp (10g) baking powder 3-4 cloves of fresh garlic powder, minced 1 tbsp (9g) tsp onion powder 1 tbsp (9g) sesame seeds (optional topping) Salt and Pepper to taste Instructions: Drain, rinse and dry the lentils as thoroughly as possible. (If using a hand immersion blender, place the soaked lentils, yogurt, eggs, and salt in a large bowl. Stir until the mixture is mostly smooth. Alternatively, you can use a food processor to blend these ingredients until mostly smooth, then transfer the mixture to a bowl). Next, add the oil, feta, olives, sun dried tomatoes, garlic, dill, baking powder, and seasonings to the bowl, and mix until well combined. Pour the batter into your greased pan. Sprinkle the top evenly with sesame seeds and bake for 50-55 minutes at 200-250F, or until a toothpick inserted into the center comes out clean. Allow the loaf to rest in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
