Get Edye's Cookbook on Amazon here - https://amzn.to/3H7Fton E-book Version - https://littlehouseofbeans.com/e-book/ols/products/outdoor-cooking-with-edye-featuring-the-omnia-oven-e-book-version Tools used: Regular Omnia pan Omnia silicone mold Hand mixer Sifter Ingredients: 3 honey crisp apples, sliced thinly 2 eggs ¼ cup (60g) of brown sugar ⅓ cup (80g) of butter, melted ½ cup (60g) of all-purpose flour 1 tsp (4g) of baking powder ⅓ cup (90ml) of milk or cream 2 tsp (5g) cinnamon 1 tsp (2.5g) nutmeg ½ cup (75g) golden raisins 1 tsp (5ml) vanilla Orange jam or Apricot jam Powdered sugar for garnish Instructions: In a large mixing bowl, whisk the eggs and brown sugar together until the mixture is pale and slightly frothy. Gradually pour in the melted butter and milk, whisking until the mixture is smooth and well-combined. Sift the flour and baking powder into the wet mixture, and stir until just combined. Stir in the cinnamon, nutmeg, and vanilla extract. Use a mandolin to thinly slice the apples, or carefully slice them by hand. Add the sliced apples and golden raisins to the batter, folding them in gently. Incorporate the apples and raisins throughout the batter. Pour the mixture into a greased omnia pan, spreading it out evenly. Bake the cake in a preheated oven at 200-250°F (about 95-120°C) for 1 hour, or until a toothpick inserted in the center comes out clean. Once baked, brush the top of the cake with warm apricot jam to give it a lovely shine. Finally, sprinkle the cake with powdered sugar before serving.
