Get Edye's Cookbook on Amazon here - https://amzn.to/3H7Fton E-book Version - https://littlehouseofbeans.com/e-book/ols/products/outdoor-cooking-with-edye-featuring-the-omnia-oven-e-book-version Instapot Glass lid that fits Omnia oven (both 2L and 3L) - https://amzn.to/4pWs3jP Tools: Omnia Oven 2L Omnia Muffin Ring Ingredients: 6 breakfast sausage patties (12oz / 340g) Johnsonville Original Recipe (sold in an 8-patty package) 3 large eggs, scrambled Pancake & waffle mix (just add water)-prepare according to package directions, using half the recommended mix-to-water ratio to yield 6 McGriddles 1/4 cup (60ml) maple syrup, plus more for serving if desired 3 slices American cheese, cut into quarters to fit each sandwich 1 tablespoon (15g) butter Instructions: In a medium skillet over medium heat, cook the sausage patties until browned and fully cooked. Remove from the pan and set aside. Scramble the eggs with 1 teaspoon of butter in the same skillet until just set; remove from heat and set aside. Prepare the pancake batter according to the package directions and set aside while you grease the muffin ring or molds. Fill each of the 6 greased molds about one-quarter full with batter. Place one sausage patty into each mold, followed by a portion of scrambled egg sized to fit. Top with cheese, then drizzle a little maple syrup over each. Finish by pouring additional pancake batter over the filling to cover. Bake at 200°F (95°C) for approximately 25-30 minutes, or until the pancakes are cooked through and lightly golden.
