(225g) package of regular egg noodles 4 tbsp (56g) of unsalted butter 3/4 lb. (340g) fresh-sliced mushrooms 1 (10oz or 280g) packages of frozen chopped spinach, drained 1 packages Lipton’s dry onion soup mix 1 cups (240ml) rich brewed coffee (I would use espresso for a bolder taste of coffee) 1 can French Fried Onion Rings 2 eggs, beaten 1 cup (120g) of mild cheese, chopped or shredded ( I used muenster) Salt & Pepper to taste Instructions: Cook the egg noodles according to the package instructions, then drain and set aside. In a skillet, melt the butter over medium heat and sauté the mushrooms until tender. Stir in the spinach, dry onion soup mix, and coffee, combining everything thoroughly with the mushrooms. Pour the mushroom mixture into the bowl of cooked noodles and mix until well combined. Add the cheese to the noodle mixture and gently fold it in. Transfer the mixture to a greased Omnia Oven, spreading it out evenly. Bake at 200F for 25 minutes. Sprinkle the top with French fried onion rings, and bake for an additional 10 minutes, or until the onion rings are golden and crispy. Serve and enjoy!
