Get Edye's Cookbook on Amazon here - https://amzn.to/3H7Fton E-book Version - https://littlehouseofbeans.com/e-book/ols/products/outdoor-cooking-with-edye-featuring-the-omnia-oven-e-book-version Tools used: Regular Omnia oven with liner or ceramic non stick pan Cherry Pitter (or straw) Whisk Ingredients: 3/4-1 pound (340–450 g) fresh pitted cherries 2/3 cups (85g) all purpose flour 1/3 cup (67g) granulated sugar 3/4 cups (180ml) whole milk 4 eggs 4oz (120g) Chocolate, broken into pieces — use your favorite variety. We used milk chocolate, but dark chocolate would be equally delicious. 1/4 tsp (1.25g) salt 3 tbsp (42g) unsalted butter, melted and cooled slightly 1 tsp (5ml) pure almond extract (Vanilla may be used as a substitute, if desired) Confectioner’s powdered sugar to dust top at the end Instructions: Melt the butter and set it aside to cool slightly. Lightly grease an Omnia regular non-stick pan. Arrange the cherries in an even layer across the bottom. Set aside. In a medium mixing bowl, whisk together the flour, sugar, and salt. Gradually add the milk, whisking until smooth. Stir in the almond extract. Add the eggs one at a time, mixing well after each addition. Whisk in the cooled melted butter. Carefully pour the batter over the cherries, ensuring they’re evenly coated. Gently sprinkle the broken chocolate pieces over the surface of the batter. Bake at 200°F (93°C) for about 30-35 minutes, or until the edges are just lightly golden and a delicate crust forms around the rim. Allow to cool slightly, then dust with confectioners’ sugar. Best enjoyed at room temperature.
