Use the larger Omnia maxi pan, reduce amounts by 35%, stuff your tortillas with more, or save for a rainy day! Ingredients: 12 ounces (340g) Mexican chorizo 1/2 onion (75g), white or yellow, diced 8 large eggs, beaten 7oz (198g) store-bought salsa verde 1 package (24.9oz or 705g) 6-inch corn tortillas 8oz (227g) jalapeño cream cheese 1 1/2 (12 fl oz / 355 ml) cups store-bought red enchilada sauce 1 cup (8oz, 226g) grated pepper jack cheese 1 tsp (2g) Paprika Sprinkle of Red Chili Flakes Salt and Pepper to taste Optional: cilantro leaves, for garnish and/or avocado, diced Instructions: In a medium skillet over medium heat, cook the chorizo together with the onion until the chorizo is fully browned, 4–5 minutes. Add the eggs, season with salt and pepper, and scramble until just set, 3–4 minutes. Remove from the heat. Spread the salsa verde evenly over the bottom of the Omnia baking dish. Cut each tortilla in half to fit the pan. Spread about 1 teaspoon of cream cheese down the center of each piece, then spoon on 2 heaping tablespoons of the egg mixture. Roll up the tortillas and place seam-side down in the Omnia oven. Arrange the halves around the dish in a circular “wreath” pattern. Pour the enchilada sauce evenly over the top and sprinkle with the shredded pepper jack cheese. Bake at 200°F (95°C) for about 30 minutes, until heated through and the cheese is melted.
