Beat in the egg yolks one at a time, ensuring each is fully incorporated. Mix in the mashed potato, ground cashew nuts, lemon zest, orange zest, heavy cream, and vanilla extract. Stir until well combined. Gradually add the flour to the mixture, stirring continuously until a smooth batter forms. In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the beaten egg whites into the batter using a spatula, taking care not to deflate them. Pour the batter into a greased Omnia pan (ceramic or silicone) pan, spreading it evenly. Bake at 200F for 55-60 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes before carefully unmolding. Slice and serve!
