For larger portions, you may opt to use the Maxi pan instead. The custard will naturally deflate as it cools, settling into its final size and texture. Tools used: Regular Omnia oven Omnia Silicone mold Sifter Ingredients: 3 large eggs, lightly beaten 1½ cups blackberries (225g) rinsed and drained ½ cup (100g) sugar 1 cup (240ml) heavy whipping cream 1 cup (240ml) whole milk 1 cup (120g) all-purpose flour, sifted 1 ½ teaspoons (7.5ml) vanilla extract 1 tablespoon (15ml) blackberry liqueur (or orange liqueur if substituting) 2 tablespoons (28g) salted butter, cut into small pieces ¼ teaspoon (1.5g) table salt ¼ teaspoon (1.25g) baking soda Instructions: In a mixing bowl, whisk together the flour, sugar, baking soda and salt. In a separate bowl, combine the eggs, cream, milk, vanilla extract, and liqueur. Whisk until smooth. Gradually add the wet ingredients to the dry, whisking until the batter is smooth and free of lumps. Pour the batter into the omnia oven. Evenly distribute the blackberries over the top and dot with small pieces of butter. Bake at 200-250F for 40 to 50 minutes, or until the clafoutis is just set and lightly golden. Serve warm or at room temperature, perfect for brunch or a light dessert.
