I’m out in Southwest Colorado in the southern San Juans, and it’s a weird mix of beautiful access and real concern. Colorado’s in the middle of the worst winter drought in history—snowpack is sitting around 53% of what it should be—so yeah, it’s easier to reach spots like this, but it also means summer water rationing, weaker creek and river flows, and fire danger going through the roof. I’m not panicking yet because I’ve seen bad years rebound in spring, but it’s definitely on my mind as I settle in for a night with a Winter Storm Warning on the forecast. With temps predicted from about -6 to -13°F and the possibility of 10–20 inches of snow, I hunker down in our Winnebago Revel and give you a real look inside—kitchen, bathroom, bed, the whole deal. I do meal prep in the compact kitchen (and yes, my eyes still hate onions thanks to my first job cutting hundreds of pounds of them), then take cooking outside to my new Lava Box setup for a “first”: sizzling chicken fajitas in the snow. To finish the night right, I fire up my favorite van cooking accessory—our air fryer—and make a giant “brownie-style” chocolate chip cookie on a parchment liner. It’s a cold, snowy, simple kind of perfect.
