On today’s video I’m doing party ribs on my Pit Boss, and I’m keeping it simple so beginners can nail it. I used two racks of baby back ribs (last time I did St. Louis, but most party rib videos I’ve seen are baby backs, so I wanted to try it). I cut the racks into individual “party” pieces, hit them with mustard as a binder, then season with just BBQ rub—nothing crazy. For the cook, I run the Pit Boss at 225°F for 2 hours to lay down that smoke and set the rub. After 2 hours, I’m looking for that dry set on the outside (no rub coming up when you touch it). Then I sauce some, leave some dry for my wife, and for the first time ever I added Mike’s Hot Honey—man, I was excited to finally try it. I wrap the ribs, crank the Pit Boss up to 350°F, and let them go about another hour until they’re around 200°F internal. After that, I unwrap and give them 10–15 minutes back on the grill to tighten up. The end result was freaking delicious—BBQ sauce plus that hot honey is a killer combo. I also re-tested charcoal pellets and, honestly, for the price I didn’t get the charcoal flavor I expected, so I’m sticking with regular Pit Boss pellets.
