In this video I’m cooking smoked BBQ chicken legs (drumsticks) on my Pit Boss pellet grill and keeping it super beginner-friendly. I start by seasoning the legs with whatever rub you like—your choice—making sure I get it all around each piece. Then I fire the Pit Boss up to 325°F, because today I wanted to test a higher temp than my normal low-and-slow chicken cook at 250°F. The goal is juicy chicken with that better, bite-through skin. Once the legs are rolling, I let them cook until they hit about 160°F internal, then I flip and add barbecue sauce. After that, I let them ride until they’re up around 175–180°F (mine were 180-something) because bone-in chicken needs to go higher than boneless. That’s how you avoid that pink stuff near the bone and make sure everything is cooked right. Total cook time for me was about 1 hour and 15 minutes at 325°F, and the end result was sauce right on the money and chicken cooked to perfection.
