In this video I’m making smoked BBQ pork chops on my Weber Smokey Mountain, and I’m keeping it simple with three nice, thick bone-in chops. For flavor, I’m using Killer Hogs The Barbecue Rub to get that color I like (that nice little red look), and I’m pairing it with Killer Hogs barbecue sauce to finish them off. This is an easy beginner-friendly cook—season them up, set the cooker to 275°F, and let the smoke do the work. My game plan is to run them at 275°F until the chops hit around 150°F internal, then I sauce them and let them ride a little longer. I checked temps along the way (I checked at 30 minutes and I was around 127–128°F on the big chop), and once they looked ready I went ahead and sauced them up and flipped them. Total cook time for me was about 2 hours, which surprised me because most pork chops I’ve done are under 2 hours. My biggest takeaway: on quicker cooks like pork chops, check every half hour so you stay on track and don’t mess anything up.
