In this video I’m keeping it simple and making a killer snack/meal on the Pit Boss: Johnsonville original brats wrapped in bacon. That’s it—brats, bacon, and a little rub on top to give these bad boys some extra flavor. I show you exactly how I wrap them up nice and easy, then season them so every bite has that smoky, salty, savory combo going on. For the cook, I run my Pit Boss at 250°F and I’m watching internal temp, not the clock. I’m taking these to about 160–165°F to be done, but here’s the trick: when they hit around 150°F (mine were about 154°F at the 40-minute mark), I bump the grill up to 300°F to help the bacon crisp up. Total cook time for me was right around 1 hour and 5 minutes. Then I build it how I like it—clean and simple—with a little mayo (yeah, I love mayo on hot dogs). The taste test says it all: easy 10 out of 10.
