On today’s video, I’m doing some easy tailgating food that flat out tastes really good—meatballs wrapped in bacon, smoked on the Pit Boss. It’s football season, so I wanted something you can knock out quick for a tailgate, a game day spread, or just an easy dinner. I keep it beginner-friendly: you can make your own meatballs, but I grabbed mine from Walmart because it makes it a lot more easier and still turns out awesome. The setup is simple. I cut the bacon in half, roll each meatball up, and pin it with a toothpick. To make life easier, I load them onto a cooking grate so I can transport them in and out of the smoker without fighting a tray. Then I run my Pit Boss at 350°F for about 45 minutes total—check them at 30 minutes, and when the bacon is almost done, I dip them in barbecue sauce and let them go another 15 minutes. I even leave a few unsauced (those back ones are for the wife). The end result is perfect: the bacon’s cooked, the meatball stays juicy, and the sauce isn’t too heavy—just enough. You can pre-make a bunch, keep them in the fridge, and when it’s time, bam—45 minutes tops and you’re done.
