In this video I crack into a pre-release tasting of Waubs Harbour’s Limited Release Maritime Sherry—sent to me ahead of launch—and I’ll be honest: I’m still not over how thick this whisky is. Waubs Harbour sit right on the east coast of Tassie, basically on the water, and they age their barrels in a spot that cops that sea breeze off the Tasmanian ocean. That salty, maritime character is a real thing in the glass, and it’s exactly why I’ve been a fan of their small-batch stuff for a while. Maritime Sherry is their oldest whisky to date with a 6 year age statement, built from two casks (ex-bourbon and Apera—our Aussie “sherry”). On the nose I get faint saltiness, damp wood, and a jammy, earthy sweetness like cherry jam. The palate is where it flexes: thick, creamy, almost syrupy mouthfeel, big caramelised raisin/Christmas cake vibes, ginger-like spice, and enough briny balance to stop it tipping into cloying sweetness. I even talk about the Talisker comparison—because if you love coastal Scottish malts, this feels like an Aussie take on that style (minus the peat).
