In this video I’m tasting the very first whisky releases from Outback Distilling Co. out in Roma, Queensland — properly remote, right at the end of a single-phase power line. That isolation has pushed them into a seriously interesting (and very Aussie) way of operating: solar power covering more than two-thirds of their energy needs, a closed-loop cooling system, and rainwater harvesting for spirit production. They also distil seasonally — steeping/malting in summer and doing more distillation in winter — because the climate does a chunk of the work. The real story, though, is what they call “arid ageing”: near-zero humidity, long uninterrupted seasons, big day/night temperature swings (below freezing to 40°C+), and dramatic air-pressure changes that drive rapid wood interaction.
