These whisky barrels have been slowly aging at the Stillmaker & Sons Distillery in the hinterland of Montville, on the Sunshine Coast, Queensland. We tried some of their incredibly smooth and velvety newmake. Then Mike pulled whisky samples fresh from their sherry barrels, and from some really special barrels that spent 30 years holding Ruby Port and 5 years holding Bundaberg's award-winning Dark Rum, before aging this developing single malt. These whiskies have not yet been released, so this was an exclusive progress tasting to see how the single malts are developing.
