In today's video I am sharing a family favourite recipe for dinner - lasagna roll ups with a twist! Not only is this delicious but super simple to make, have a slight twist to an original lasagna recipe and are family budget friendly. Hope you enjoy!! Thank you so much for watching! Recipe: Yum & Yummer Cookbook https://www.amazon.ca/Yum-Yummer-Ridiculously-Recipes-Thatll/dp/1775047008/ref=sr_1_1?crid=27T7V63GMJPE3&keywords=yum+%26+yummer+cookbook&qid=1656466821&sprefix=yum+%26+yummer%2Caps%2C101&sr=8-1 Filling: 2 C ricotta cheese 1/2 C grated parmesan 1/2 C canned pure pumpkin 1 pkg of frozen spinach (thawed, drained and chopped) 1 egg 1/2 tsp salt & pepper Pinch of nutmeg 12 lasagna noodles 1 jar of marinara sauce 1/2 C shredded mozzarella cheese Preheat oven to 375 F. Spread thin layer of marinara sauce over bottom of casserole dish. Combine all filling ingredients in a medium bowl. Place approximately 1/2 C of filling down the center of each cooked lasagna noodle and add 1 tbsp of marinara sauce over filling. Roll up noodle and place in casserole dish seam side down. Spread remaining marinara sauce over roll ups and top with mozzarella cheese. Bake in oven covered for 20 - 25 min, remove cover and bake another 10 min uncovered. Serve and enjoy!!
