Cooking On The Road | More Van Life Meals In The Rice Cooker

Cooking on the road as a solo female van life traveler with a trusty rice cooker, you can whip up delicious meals while embracing the freedom of van life. Two of my go-to dishes are basil pesto zucchini pasta and pumpkin gnocchi—both easy to prepare and packed with flavor. For the zucchini pasta, I first cook the gluten free quinoa pasta and chicken in boiling water until both are cooked through, whilst that is cooking I prepare the pesto by blending basil and olive oil in the usb blender, then I add the zucchini to the pasta and chicken, once that is all cooked I drain and return to the cooker with the basil pesto to heat it all through. A healthy meal that’s perfect for days on the road. When I’m craving something a little more comforting, I opt for pumpkin gnocchi. Using pre-made gnocchi and making a pumpkin puree, I cook some chicken and pumpkin chunks in the rice cooker until soft, remove them from the water and place the gnocci into the water to cook through. Whilst that is cooking I puree the pumpkin. Then after draining the gnocci I return it all to the rice cooker to heat through. The result is a cozy, satisfying meal that’s both filling and flavorful. Both meals are quick to prepare, require minimal ingredients, and keep well in the van’s limited kitchen space.
