Stuffed Pork Chops on the SNS Travel Kettle!

Did 2 nice pork chops stuffed with potato filling on the Slow ’N Sear Travel Kettle! 1st time try and they were good! • Started with 2 filling stuffed pork chops from Stoltzfus Meats. • Set up the SNS Travel Kettle for indirect cooking. • Lit the charcoal in the Slow ‘N Sear to hold around 350F degrees. • Placed the stuffed pork chops on the indirect side. • We checked them out when it got to around 80 we checked them out. • We covered them up when the internal of the stuffing was around 85 degrees to keep the stuffing from burning. • When the stuffing reached around 130 in the stuffing, the meat was very close to done. • We moved the pork chops over the coals for some color on the bottom. • Pulled them off once the stuffing was almost 145 and let them rest. Summary: This was a learning experience for sure and they turned out nice.
