Pig Wings! SNS Grills MasterKettle!

Smoked some great Mangalista Pig Wings from Stone Arch Farm on the SNS Grills MasterKettle! Seasoned with PS Seasoning Multi Tool! Turned out great! • Started with a 2 meaty Mangalista Pig Wings from Stone Arch Farm! https://www.stonearchfarmllc.com • Had the SNS Master Kettle running right at 250F and did have water in the Slow ‘N Sear water tray. • Seasoned both pig wings with Multi Tool all-purpose rub from PS Seasonings. • We were going to 160F before wrapping them and did turn them around 145F. • Once the seasoning was set at 160F we wrapped them. • Once they reached around 203F we checked them for probe tenderness. We needed to leave them on until they reached 205F to 208F. • Let them rest for about 45 minutes and they turned out great. Summary: These Mangalista is a higher fat content pork and these really turned out very nice. Very tender and the flavor was outstanding. Check out their website and order some for yourself!
