Picanha! Kamado Joe!

We cooked the whole Picanha on the Kamado Joe! Used ChefsTemp S1 and Breezo fan combo to run the grill. Great cut of Beef! Willlauer Farms! • Started with a nice Picanha from Willauer Farms. • Trimmed some fat and kept a nice ¼” layer of fat cap. • Seasoned with salt only for about 24 hours in advance. • Had the grill set up with the divide and conquer. One side for indirect and grate on the top and the other side set up for searing and the grate in the low position. • Was shooting for a grill temp of 250F degrees using the ChefsTemp S1 and Breezo Fan. • Once it passed 80F degrees on the MeatStick IV we checked it to see how it looked. • We pulled this when it got to about 125F and turned the grill up to 400F. • Seared all sides without burning the fat cap and let it rest. Summary: This turned out great and the flavor you with just a salt brine is awesome. The ChefsTemp S1 and Breezo combo make this so easy to keep the grill exactly where you want this to speed up the cooking.
