This 4 Burner gas grill upgraded with a viewing window keeps the slick design. Silver powder-coated side, back, and base panels. Tomahawks: • Started with 2 nice Prime Tomahawks from Costco. • Seasoned the 2 Tomahawks with Grillaholics SPG, 3 hours in advance. • Set up the Monument Mesa 400 with the 2 outside burners on high and the 2 inside burners off. Ended up keeping the 2 outside burners at med-high. • Placed the tomahawks in the center of the grill and maintained 250 degrees at the grate level. • Flipped them when the one reached 85 and the larger one was at 75 degrees Fahrenheit. • Once the reached 111 we pulled them off and turned all of the burners on high. • We seared them each 1 minute per side 2 times each and pulled them off. • Let them rest for about 10 to 15 minutes before cutting into them. Shrimp: • Started with one pound tail on shrimp, 1/8 stick butter and some pressed garlic. • Used our Forever pan and started with the side burner on high which was too hot, settled in around medium heat. Cooked the shrimp until they were 145+ and in this case some were much higher, but still tasted great! Summary: The Monument Mesa 400 is a great value for the outstanding grill that you get. Took us around 2 hours to put together, but could probably do that in 1 hour or less now. The surf and turf turned out great and I am looking forward to many more cooks on the Mesa 400!
