Jumbo Joe! Porter Road Chuck Eye Steaks! Pit Patriot AP!

Sear First Chuck Eyes from Porter Road, used Pit Patriot’s All Purpose Seasoning on the Weber Jumbo Joe! Used on SNS Charcoal Basket for 2 zone cooking! • Started with 2 nice chuck eyes from Porter Road. • Seasoned with Pit Patriots All Purpose Seasoning. • Set up the Jumbo Joe to cook with the SnS Charcoal basket. Used a ¾ of a chimney and left the vents wide open. • Put the chuck eyes on the grill on the direct side to sear them. • Went 1 minute per side 2 times each and then flipped one more time for 30 seconds. • Moved them to the direct side and let them come up to temp. • Once they reached the low 120’s, we pulled them off to rest. • Covered them to rest until we were set up for the ending. Summary: This was a great memory cook; chuck eyes were what I ate when I first moved out because of price, and they have such great flavor. The Pit Patriots All Purpose Seasoning is perfectly balanced and adds such a great flavor. I would make these exactly the same way again.
