Homemade Italian Sausage! Slow ’N Sear Travel Kettle for the Perfect Cook!

My son-in-law and I made some incredible Italian Venison Sausage! Thanks to Chef Johnny for his recipe! • We got the recipe from Chef Johnny at “Texas Style BBQ and Cuisine” • My son-in-law Sean and I made 47 lbs of venison and pork Italian sausage. We used some of the links that we made. • Set up the SNS Travel Kettle for indirect cooking the entire time. • Lit the charcoal in the Slow N Sear to hold around 250F to 275F degrees. • Placed the sausage links on the indirect side. • When they were on around 18 minutes we flipped them, let them go another 15 minutes and they were at 145F degrees. • Left them on another 12 minutes they hit 160F to 165F degrees and we pulled them off. Summary: The sausage has such great flavor and these make a great lunch! The travel kettle is perfect for these types of cooks! The recipe we got from Chef Johnny was perfect. He also quickly answered my question on how much pork trimmings I should use as well. He is a great resource for anyone smoking and grilling. Here is his channel: https://youtube.com/c/TexasStyleCuisine Here is the recipe we used and also his video we followed: https://youtu.be/HlOTQU6N-TI Ingredients for 10 lbs Sausage: 7 lbs lean venison meat cubed 3 lbs pork trimmings 1 oz whole fennel seeds (I used cracked) ¼ oz Spanish paprika (I use smoked) 16 oz cold water 3 ½ oz kosher salt 1 oz sugar 1 oz black pepper Grind meat and mix in ingredients.
