Filet Mignon on the MasterKettle!

We did some great Prime Filet Mignon steaks from #Linz on the SNS MasterKettle. Reversed sear one for medium rare and the other for medium well. Turned out great! • Started with two beautiful Prime Filets from Meats by Linz. Prime Cuts. • Salt brined the filets and put in refrigerator for 24 hours. • Set up the SNS MasterKettle Grill direct and indirect cooking. • Lit the charcoal in the Slow ‘N Sear to hold around 250F degrees. • Placed the one filet on first to make this one toward medium on the indirect side until they reached about 75F degrees we added the 2nd. Medium steak. Pulled them off when we hit 135F and the medium rare until 115F. This step took about 40 minutes. • Let the grill get super-hot. • Seared for 1 minute each side 2 times and removed them. • We had 2 perfectly cooked filets! Summary: The Filets turned out perfect! The Slow and Sear MasterKettle Grill worked perfectly and would do these exactly the same next time. Having the MeatStick V and being able to monitor the temperature while searing is a game changer!
