Delmonico and Porterhouse! SNS Kettle! Scottish Highland Beef!

The richest looking beef I have ever seen! Stone Arch Farm has beautiful Scottish Highland Beef and is reverse searing the Delmonico and just searing the porterhouse steaks turned out perfectly! Must try! • Started with a beautiful Delmonico Steak and a Nice Porterhouse Steak from Stone Arch Farm! https://www.stonearchfarmllc.com • Had the SNS Kettle running around 275F. • Started just the DelMonico indirectly because it was thicker. Once it reached around 80F we started to sear both steaks. • We were shooting for 125F so we seared a few times until it was close and pulled them to rest. • I thought I went slightly too far, but they both turned out nice! Summary: These Scottish Highland Beef cuts were some of the nicest looking meat when I unpacked them. Supper rich in color. I put kosher salt on them about 8 hours in advance and the flavor was outstanding. I highly recommend giving these a try! Check out their website and order some for yourself!
