Bone In Ribeye Steaks on the Kamado Joe Big Joe! Soapstone for the Sear!

We show how we reverse sear these huge bone in ribeyes and sear on the KJ Soapstone. • Started with two nice Bone In Ribeyes that we cut from a 3 bone roast we got from a local supermarket. • Coated the Ribeyes 2 hours before the grill with Grillaholics SPG. • Set up the Kamado Joe with an indirect side and the soapstone side. Running about 275 degrees. • Placed the two ribeyes on the indirect side until they reached around 80 degrees and then turned them over to promote even cooking until 110. • Pulled them off while we opened the vents to let the grill temp come up to about 400 degrees to get the soapstone up in the 500 degree area. • Seared on the soapstone for 1 minute each side twice and 30 more seconds on one side and removed them. • Let them rest for about 10 to 15 minutes before cutting into them. Summary: I had 2 issues going on for the sear. I didn’t have enough coals to get the fire as hot as I would have liked. I also had the steaks stick to the soapstone and never had that happen before? Possibly from not having enough oil or the stone was not as hot as I wanted? The ribeyes still got a great sear and were very tasty! You can always learn on every cook you do!
