Actually run around 280ish. • Once the steaks got between 80 we flipped them and then when they hit about 115 we pulled them off and opened the bottom vents until we had a screaming hot fire for searing. • Seared the bone in filets 1 minute per side two times for a great sear. Summary: My wife loves the bone in filet and for me not being a big fan of the filet, these really had some great flavor and were delicious! The Slow ‘N Sear Travel Kettle is a work of art.
