Today on the homestead we’re doing some much needed sawmill maintenance to keep things running smooth. There’s always something that needs tending when you live this life, but we’re thankful for the work. Back in the kitchen, I’m making my version of old-fashioned chicken pie. And to end the day on a sweet note, we bake a cast iron pound cake just like Grandma used to make. It’s a full day of real homestead living… hard work and homemade food. Thank y’all for being here with our family ❤️ Get ya a good laugh https://youtu.be/oQvcMTeb4-g Old Fashioned Cast Iron Pound Cake 1 cup (2 sticks) butter, melted 2 cups sugar 4 eggs 2 cups all-purpose flour ½ tsp salt ½ tsp baking powder 1 cup whole milk 1 tsp vanilla extract Before You Begin Grease a 10 inch well-seasoned cast iron skillet with butter or lard. Preheat oven to 325°F Instructions In a big bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, mixing well after each. In a separate bowl, stir together flour, salt, and baking powder. Add dry ingredients to the batter alternately with the milk. Start and end with flour. Stir in vanilla. Pour batter into the greased cast iron skillet and smooth the top. Well hey y’all, today was one of them real-deal homestead days where you’re dirty before you even get started. We had rain all morning, the sun finally popped out, and I looked at the calendar and realized it was the last good day to band calves by the signs. We went on and got it done—feisty little things—and then tried to roll right into the “regular scheduled program,” even though we both looked like we needed a bath (but we didn’t take one). Once things settled down, I headed to the sawmill for some much-needed maintenance. Several of y’all told me to try Mechanic in a Bottle, and I’ll be honest—I’m impressed. That sawmill went from not wanting to run at all to purring pretty decent, and I went ahead and changed the oil and filter, wrote the date on it (since there’s no hour meter), and got it as ready as I can for sawing barn lumber when the mud dries up. I’m building this barn for that old timey look—board and batten, weathered, and even circle-sawn marks for the siding. Back in the kitchen, I made Maggie’s requested “Megan chicken pie” (no vegetables, because I cook for a picky crowd), and finished the day with a cast iron pound cake like my granny used to make—brown butter and all. Hard work, homemade food, and a warm wind blowing through… that’s a good day to me.
