Today in the kitchen, I set out to make a classic chicken pot pie but the crust had other plans. It crumbled, it cracked, and it just might be the ugliest pie I’ve ever made. But here’s the thing: it still tasted absolutely delicious! That’s the heart of down home REAL cooking — food doesn’t have to be perfect to bring comfort and joy. Pie Crust 2 1/2 cups AP flour 1/2 tsp salt 1 cup lard (or shortening) 1 egg, beaten 1 tbsp vinegar Cold water Combine flour and salt, cut in lard. In a measuring cup, beat egg, add vinegar, add enough cold water to equal 1 cup. Add enough liquid to dough that it starts sticking together (start with 4-5tbsp). Dont handle dough too much. Makes 2 9” pie crusts. Chicken pie 2–3 cups shredded cooked chicken (leftover works great) 2 cups chicken broth (or more if needed for consistency) 1 cup milk or cream 4 tbsp butter 2 carrots, diced 1 cup frozen peas (or fresh if in season) 1–2 cloves garlic, minced 1/3 cup all-purpose flour 1 tsp salt (adjust to taste) 1/2 tsp black pepper 1 double pie crust (homemade or store-bought) Instructions Preheat oven to 400°F Sauté vegetables Make the roux Slowly whisk in chicken broth, then milk/cream. Stir until thickened Add chicken & peas More mixture into skillet. Lay pie crust over top Brush with egg wash for golden color. Bake 25–30 minutes until crust is golden brown and filling is bubbly.
