Keeping vehicles in top shape is just as much a part of homesteading as planting a seed or preserving the harvest. Meanwhile, Meagan stayed busy in the kitchen — canning up apple pie filling, baking fresh zucchini bread, and cooking supper from the homestead pantry. And when it comes to cooking, there’s one ingredient she swears by… bacon grease. Thanks for being here and sharing in the journey with us. 💌 Sign up for our newsletter “Musings from the Homestead” for behind-the-scenes stories and updates: www.truegritappalachianways.com Zucchini Bread Recipe -1 3/4 cup AP flour -1 1/2 tsp baking powder -1/2 tsp baking soda -1 1/2 tsp cinnamon -1/2 tsp salt Combine these ingredients in a small bowl, sit aside In a seperate bowl combine -2 eggs -1/2 cup oil (lard, butter, or oil) -3/4 cup brown sugar -2 cups grated zucchini -vanilla Preheat oven to 350. Add dry ingredients to wet ingredients. Mix until just combined. Fold in 1 cup chocolate chips. Add to greased loaf pan. Add chocolate chips on top of bread if desired. Cook for around 50 minutes. Check with toothpick. Let cool in pan for 10 minutes. Remove from pan to a plate to completely cool.
