It Ain’t Work If You Enjoy It || Beet Pickles, Kraut, Pickled Eggs & Slaw || June 2, 2025

Find my inspiration for making kraut this way over at Celebrating Appalachia! https://youtu.be/ra5Mgi6xqgg?si=QndN51-tqBvu_CeZ Beet Pickle Recipe Fresh Beets 1 cup water 2 1/2 cups vinegar 1 cup sugar 3 tbsp pickling spice Trim fresh beets, leaving at least 1 inch of root and 1 inch of stem. Place ina large pot of boiling water, boil until fork tender. Remove beets from hot water, cover with cold water to allow them to cool. Once they are cool enough to handle, cut off root and stem, skin will slip off easily. In a separate pot combine water, vinegar, sugar and pickling spice, simmer for 15 minutes. Place beets in jar, cover with hot liquid, apply lids and rings, Water bath for 30 minutes. Store in a cool dark place, allow at least 2 weeks before giving them a try!
