Preheat oven to 450°F. 2. Line a large baking sheet with parchment paper. 02:05 3. Toss cauliflower florets with olive oil, low sodium soy sauce, and lemon juice. Spread out into a single layer on the prepared baking sheet and roast in the preheated oven until slightly golden brown but still with a light crunch (about 20 to 25 minutes). 04:51 4. Heat 1 teaspoon of olive oil and the minced garlic in a small saucepan on low heat until garlic is fragrant (1 minute). Add red lentils, stir in low sodium vegetable stock and ½ teaspoon of salt. Cut cauliflower into “steaks” or large pieces and coat with olive oil. Grill until desired doneness, cut into small florets and toss with low sodium soy sauce and lemon juice.
