These stuffed honeynut squashes are an addicting dish that makes a perfect vegetarian Thanksgiving dish, or a delicious side dish for any occasion. Roasted grapes, and caramelized onions add layers of sweetness that perfectly compliment the savory mushrooms and lentils. 🌱Turn the volume on to hear the sounds of cooking. Cooking can be meditative and is a great opportunity to slow down, relax, and engage in your senses. A holiday dinner can be the perfect time to introduce your friends and family to the honeynut squash. Honeynut squashes just started showing up in the farmers markets about 2 years ago and I look forward to their season every year now. Created by Cornell plant breeder, Michael Mazourek, these squash are a lot smaller than a butternut squash and have much more flavor. The skin is thin and edible. Sometimes on lazy days, I’ll cut them in half and roast them in the oven to eat whole, with seeds and all. I was trained as a chef at the Culinary Institute of America in Hyde Park, NY and studied nutritional sciences at NYU and Cal Poly San Luis Obispo. I spent my young childhood years exploring the kitchen of my dad’s restaurant and “testing” recipes while home alone (it was a long time ago!). I love creating recipes that are often inspired by my Taiwanese roots and my time living in North Carolina, Georgia, Taipei, New York City, and California. After working in professional kitchens, teaching cooking classes, and cooking for families as a private chef, I hope to empower others to cook more through videos and cooking classes. Some of my favorite things include visiting farmers markets, cooking family meals, teaching cooking classes, reading food memoirs, and creating visual stories.
