RASPBERRY JAM CHOCOLATE CHIP COOKIES Makes about 16 to 18 cookies (2-inches each) 1 cup rolled oats 1 tablespoon ground flaxseed meal 1/2 teaspoon baking powder 1/2 cup plus 1/3 cup date sugar 3/4 cup unsweetened nondairy milk 1/2 cup almond butter 2 teaspoons pure vanilla extract 1/2 cup (scant) fruit-sweetened raspberry jam (no-sugar added) unsweetened chocolate chips, to taste Instructions Preheat oven to 400 degrees. In a large food processor bowl, process oats into flour. Add flax, baking powder, and date sugar and pulse briefly. Add in milk, almond butter, and vanilla, and combine well. Scoop about 2 tablespoons of batter for each cookie onto parchment-or silicone-lined baking sheet. Flatten mounds of batter evenly. Spread tops with about 1 teaspoon of jam each, plus a few chocolate chips per cookie, to taste. Bake for about 12 minutes, or until the jam is bubbling and the cookies are firm. Remove from oven and place baking sheet on cooling rack. Enjoy warm or at room temperature.
