The big takeaway is to actually count what you’re doing: 1 2 3 4 5 6 7, then adjust the altered tones and let your ears lock onto the sound. After that I compare the minor modes to natural minor—then Dorian pops because of the natural 6, and Phrygian hits different because of the b2. Once you get comfy, you can take the same idea and mess with other scales too (dominant flavors, whatever you’re into). Put on a drone, count the intervals, and just rock out.
