It is delicious and perfect time for Thanksgiving and even for Christmas. This cake is rich and full of wonderful textures from all the add ins and spices. I also chose to use 1/2 cup of milk instead of water, The recipe called for oil of your choice, 1/2 cup, total. Hey you all—welcome back to Journey with Char! In this video I’m making the quickest, easiest “everything” carrot cake using a box mix, and I’m not shy about it either. With Thanksgiving right around the corner (and Friendsgiving, potlucks, work parties—everything), this is the kind of dessert that helps you cut time and still show up with something that tastes homemade. I used Betty Crocker for the first time (I’m usually a Duncan Hines girl), and I combined two online recipes to get the best of both worlds. I doctor the mix up with all the fixins: eggs, milk instead of water, applesauce, vanilla, and extra warm spices like cinnamon, nutmeg, and ginger. Then I fold in the textures that make carrot cake so good—fresh grated carrots, raisins, coconut, walnuts, and pineapple. I also do a moisture hack with 1/4 cup avocado oil + 1/4 cup sour cream (or you can do all oil). While it bakes, I whip up homemade cream cheese frosting with a little lemon juice for that tang—please do that part!
