Stone crab season opened October 15, and I’ve been dying to do this since we moved to the Keys—go out on opening day and see what commercial stone crabbing is really like. So I teamed up with veteran one-man operation Capt. Louis Cave out of Key Largo, loaded the boat with pig’s feet and old dead fish (yep… crabbing is a dirty business), and started pulling traps in that “slot machine” kind of way—could be loaded, could be nothing. Watching Louis read a line, shuffle traps to keep them straight, and work through buoy after buoy was unreal. We break claws legally and sustainably—stone crabs regrow them (about 18 months to regrow a legal claw), and we check every claw with the gauge so we don’t take shorts. Louis also explained the whole “take one or take both” debate, floaters/lights (soft, see-through claws during molt), and why the price is what it is—because this is serious labor, especially when the puller quits and you’re hand-hauling heavy traps in the wind. By the end, we had about 4.5 buckets—around 100 lbs and roughly $4,000 retail on the boat. Then the work keeps going: claws have to be cooked immediately (no icing), because that meat will stick and they’ll spoil fast. Elizabeth’s favorite meal is officially on deck.
