We only had a short weather window offshore Key Largo, so we brought everything but the kitchen sink (and yes… we forgot the actual kitchen sink). We started in close—only about 136 feet—because the Gulf Stream was tight and the flying fish were in. I was messing around with some deep-diving plugs and different hook setups because I’m trying to find a plug that’ll truly run right at 8–10 knots without popping up. While we experimented, we kept our eyes peeled for the real giveaway offshore: birds. Once we found diving birds, Elizabeth got the boat in position and I talked her through how to “shoot” the school without running them over—go around, make a sharp turn, and drag your lures way back through the middle of where they are (and where they’re going). It worked immediately: double hookup on blackfin tuna, full sprint to get both fish in before the lines crossed. We put three solid blackfin in the box before that front rolled in fast—forecast was dead-on—and we hightailed it back in. Back at the dock, I turned that tuna into spicy tuna crispy rice… using a mini waffle iron. It took some experimenting (turns out it can take close to 15 minutes to get it really crunchy), but once we dialed it in, it was a straight-up home run.
