It was an absolute scorcher of a Sunday afternoon down here in the Florida Keys, but I had the lovely Elizabeth with me—so you already know I was feeling good about our odds. We ran offshore to do some recon and hunt mahi and tuna, and it didn’t take long. We saw birds, put out a feather, and got smashed immediately with only one line out. We released a couple smaller mahi, then finally boxed a solid dinner fish right around 24 1/2 inches. The ocean was straight up boiling—bait everywhere, birds working all around us, and fish blowing up in multiple directions. The biggest takeaway from this throwback is timing: lately, that late afternoon bite has been beating the morning bite, and it showed again. We even ran into that mixed-bag chaos where something was grabbing fish and cutting them off (we’re guessing barracuda, and we’re not trying to think about the “other” option). Before we called it quits, Elizabeth got a tuna on board, and we took it back to the kitchen. From boat to table, we turned that mahi into a Korean-style dinner—light cornstarch/garlic dusting, quick pan fry in avocado oil, then a broil with a honey-based sauce to caramelize on top. Finished with green onions and toasted sesame seeds, plus rice, cucumbers, carrots, and legit spicy kimchi. That recipe went straight into the long-term box.
