This throwback Florida Keys trip was pure chaos in the best (and worst) ways. We kicked the day off on a straight-up recovery mission to get Heiko’s anchor back after the seas kept us from grabbing it earlier. Watching him drop down and finally get that thing had our legs turning to jello just looking at it—“all of this for a freaking anchor,” but hey, mission accomplished. After that, we slid right into bottom drifting and the bite was on. We rigged up a ‘cuda with a wire rig, ran a treble as a little stinger, and sent it down with a balloon clip and a 6 oz sinker. The payoff was unreal—absolute tank mutton snapper and even a monster triggerfish. Of course, the mutton had to get the last laugh and buried a hook in my hand… with basically zero first-aid gear on board. We improvised with whatever tools we could find, closed the barb, and yanked it out so we could get back to fishing. Back at the dock, I walk through how I fillet a giant mutton snapper clean—no waste, clean cuts, and taking my time because those big fish always have surprises (like wire and hooks still in them). We wrapped the day the only way you can after that kind of madness: a laid-back cruise over to the Key Largo sandbar.
