We headed out into the Lower Florida Keys with Heiko and our buddy Capt. Matt from Marathon Sport Fishing with one goal: swordfish. The swordfish didn’t want to play, but the deep drop bite absolutely exploded. We were dropping down around 1,000–1,200 feet, watching that rod tip like a hawk, and loading the boat with blackbelly rosefish—aka “rosies”—which are hands-down one of the most delicious, underrated deep-water fish we get down here. On the water we talk through how we’re rigging it (including why you want a little skin on that barracuda bait), how to drop without snapping off a 3 lb weight, and how to fish the bite without dragging. Then things got straight-up wild when we hooked a massive shark that came up with a rosie in its mouth—so we did the right thing, got the scissors, and cut him off clean. Back at home, I show exactly how I clean rosies safely (gloves are your friend—those spines hurt), and why I like to ice them overnight to firm the meat. Elizabeth finishes it off with a spicy Cajun fish bowl and a homemade Cajun remoulade that’s easy, bold, and perfect for a warm Keys catch-and-cook night.
