I break down our timing for stretch-and-folds, resting, and the overnight fridge proof (yes, we literally cover the bowl with a shower cap and dust a little flour on top). Then I show how we bake at 450° using a preheated Dutch oven to get that great oven spring and crust—30 minutes covered, then uncover and finish at 430° for 15 minutes.
