Catch, Cook & Camp Blackened Catfish on an Open Fire

Sometimes the best trips aren’t about filling a cooler—they’re about slowing down and spending time together. In this video, my son and I head to the river for a simple overnight camping trip. We set up a small tent on the riverbank, gather firewood, and spend the evening chasing a few catfish before turning our attention to the campfire kitchen. After cleaning our catch, we cook up a classic Cajun favorite—blackened catfish—using a cast iron pot hanging from a cooking tripod over an open fire. There’s just something special about cooking fresh fish outdoors with nothing but wood smoke, cast iron, and good company. As the night winds down, we settle in by the fire and get a little rest before my son has to head out early for work. The next morning, I take my time, brewing coffee over the campfire, frying up some eggs in a cast iron skillet, and trying a little more fishing before packing up and heading home. The fish weren’t huge, and the Louisiana heat was definitely working against us, but the memories made around the campfire were worth every bit of it.
